What Is a KOT (Kitchen Order Ticket) and Why It Matters

8 July 2026 · Piatto Pro Team

Ask a new restaurant owner what a KOT is and you’ll often get a shrug. Ask a head chef in the middle of a Saturday rush and you’ll get a very clear answer, it’s the thing that stands between order and chaos.

The one-line definition

A KOT, Kitchen Order Ticket, is the instruction that tells the kitchen what to cook. When a server (or a customer via QR) places an order, the POS fires a KOT to the relevant kitchen station: starters to one station, mains to another, drinks to the bar.

Why it’s more than a printout

A KOT does three jobs at once:

  • It separates ordering from cooking. The bill is a money document; the KOT is a production document. Keeping them distinct means the kitchen cooks from a clean instruction, not a cluttered bill.
  • It routes work. Each station sees only what it makes, so nothing is missed and nothing is cooked twice.
  • It creates accountability. A timestamped KOT tells you when an order was fired and how long it’s been waiting, the raw material of a well-run pass.

Paper KOTs vs digital

Printed chits work until it gets busy, then they pile up, get wet, blow off the pass, or get misread exactly when the kitchen can least afford it. Digital KOTs on a kitchen display don’t. The order sits clearly on a screen until the station bumps it done, with its timer running so the expediter can see what’s aging.

Where KOTs fit in your service

A good KOT flow ties the whole floor together: order taken (counter, table-side app, or QR) → KOT fired to the right station → cooked → bumped → served → billed. When those steps run on one system, orders don’t fall through the gaps between them.

That’s how Piatto Pro handles KOTs and the kitchen, orders route to the right station the instant they’re placed, whether they come from the counter, a captain app, or a QR scan. One flow, no lost chits.
