How to Reduce Food Cost in Your Restaurant
25 June 2026 · Piatto Pro Team
Food cost is the number that decides whether a busy restaurant is actually profitable. You can be packed every night and still bleed money if the cost of what’s on the plate creeps up unnoticed. Here’s how to get it under control, and keep it there.
First, measure it properly
Most owners “know” their food cost as a rough monthly figure pieced together from purchase bills. That’s too slow and too blurry to act on. Food cost should be measured per dish: what each recipe consumes in raw materials, priced at what you actually paid. Until you cost the plate, every improvement is a guess.
Track stock at the recipe level
When you sell a butter chicken, the rice, the chicken, the cream and the gas behind it all leave your inventory. If your system only tracks finished items, you never see that drawdown until the monthly count comes up short. Recipe-level inventory deducts raw materials as dishes sell, so your food cost is a live number and shortages show up the day they happen, not weeks later.
Kill wastage you can’t currently see
Spoilage, over-portioning, trim and breakage are where margin quietly disappears. Record them as they occur rather than discovering them at stock-take. Once wastage is visible, it’s manageable: tighten portioning on the worst offenders, adjust par levels on perishables, and prep to actual demand instead of habit.
Tighten purchasing
- Match invoices to what arrived, not what was ordered, catch short deliveries and price creep before you pay.
- Track vendor prices over time so you notice when a supplier drifts up.
- Consolidate where you can for better rates, but keep a backup supplier for volatile items.
Let the data point you to the problem
Your POS already knows which dishes sell and, if it’s costing recipes, which ones actually earn. Pull that together and the picture is usually stark: a handful of popular dishes with thin or negative margins are dragging the whole menu down. Re-price them, re-engineer the recipe, or drop them, but you can only do that if you can see it.
A system that connects billing, recipe-level inventory and reporting turns food cost from a monthly surprise into something you steer daily. That’s the point of Piatto Pro’s inventory and reporting, the numbers that tell you exactly where the margin is leaking.
